Restaurant Matilda Sustainability Efforts

  • Over 85% of ingredients sourced locally, seasonally, and sustainably — including meat, local farm-raised fish, free-range eggs, natural levain bread, and vegetables, reducing carbon emissions
  • We personally visit farms using a small car instead of semi-truck deliveries
  • Utilize on-property vegetable garden beds and foraging for many ingredients
  • All vegetable trim and protein bones are used for stocks and broths incorporated into menu dishes
