- Dry amenities packaged in recyclable cardboard, ECF (Elementary Chlorine Free) packaging
- Classic room keys and door codes, eliminating plastic single-use cards
- Use of eco-friendly cleaning supplies
- Predictive watering irrigation system based on rainfall (EPA WaterSense approved, recognized by the US Environmental Protection Agency)
- Energy-efficient lighting, toilets, and restricted flow faucets and shower heads
- Water filling station with filtered water served in reusable glass carafes instead of plastic bottles
- Electric vehicle charging stations available
- High-efficiency HVAC systems and smart thermostats
Restaurant Matilda Sustainability Efforts
- Over 85% of ingredients sourced locally, seasonally, and sustainably — including meat, local farm-raised fish, free-range eggs, natural levain bread, and vegetables, reducing carbon emissions
- We personally visit farms using a small car instead of semi-truck deliveries
- Utilize on-property vegetable garden beds and foraging for many ingredients
- All vegetable trim and protein bones are used for stocks and broths incorporated into menu dishes
- Used cooking oil and fats are recycled into fuel by a partner company
- Every part of animals used is fabricated and utilized (animal fats for cooking, bones for stock)
- Use of Zero Acre oil, made from fermented sugar cane
- Most kitchen byproducts are repurposed for new menu items or other properties (e.g., beef trim into ground beef, prosciutto trim into croquettes, stocks used for soups)
- 100% of wine list is natural wines from producers using natural resources, energy-efficient equipment, and regenerative agriculture practices
- All open wine at night is converted into vinegar for kitchen use
